Pineapple Swish

Hawaiians call this fermented pineapple drink Okolehao. Mexicans call it Tepache. I've always called it Pineapple Swish. But whatever we call it, it is amazingly easy and oh so refreshing.

How I usually do it:

  • 1 ripe pineapple
  • 1 cup sugar
  • 2 tbs ground cinnamon
  • 8-10 whole cloves
  • 4 Star Anise
  • 3-4 quarts of water (depending on your container)

Some people use a darker sugar rather than white refined sugar, I guess for taste. I used this cane sugar from Amazon last time. It added a fine nose, some notes of island flavor with a finish of aged oak. (I'm kidding)
